The first documented use of vinegar as food and medicine goes back to ancient Babylonia (c. 3000 BC). Herb vinegars have been used for centuries as wellness formulas and to support recovery from various ailments.
We use organic apple cider vinegar (ACV) which is naturally acidic and helps to support good production of stomach acid making it an excellent digestive tonic. Apple cider vinegar despite being acidic helps promote a more alkaline environment within our body due to the way it is digested. Vinegar also has a long history of use as an aid for supporting stable blood sugar levels.
The herbs we use provide support to healthy body functioning specifically targeting immunity, detoxification processes, inflammatory processes and digestion as well as providing phytochemicals, vitamins, and minerals.
We recommend taking 10mls per day (or up to 5mls for children) diluted in 10mls of water as a daily tonic. They can be quite stimulating so are best taken in the morning.
Can also be used in salad dressings or diluted with juice or sparkling water as part of a delicious health-giving drink.
We create our tonics in small batches and flavours may vary from batch to batch due to seasonal variation. Flavour profile will also evolve in the bottle over time.
This is normal and is the “mother” of the vinegar, which contains strands of proteins, enzymes and friendly naturally occurring bacteria. The sediment also contains some of the pressed infused plant material. We recommend shaking the product before use.
Our Daily ACV tonics are crafted by hand in small batches, following long-established methods that herbalists have been using for centuries. We select herbs and fruits with specific qualities that support good health and well-being, many of these are grown ourselves.
Our ingredients are slowly macerated in raw organic apple cider vinegar for several weeks. This extracts beneficial vitamins, minerals, and phytonutrients from the plants. After we strain our herbal vinegar, we add organic honeydew honey. This special honey is produced by bees that forage in native beech forests.
Finally, we bottle and carefully label this health-giving tonic, so it is ready to send to you.
A shrub is essentially a vinegar fruit syrup that is used diluted in various drinks. They are popular in mixed drinks where they add a unique sweet sour flavour profile.
Our shrubs are pasteurised to help keep them shelf stable.
